Batata Dulce

Ingredients

Pudding:

1/2 lbs or 1.5 cups of Batata (or sweet potatoes), boiled soft

2 cups of coconut milk (or dairy free milk of choice)

1 cup of coconut cream

1/4 teaspoon of salt

2 teaspoons of chai spice mix (cinnamon, cardamom, cloves, coriander, ginger, white pepper)

1/3 cup coconut sugar

1/4 cup of dates/ raisins, chopped (optional)

1 tsp vanilla

2 teaspoons of either high quality gelatin or tapioca powder

1 tbsp cold water

Toppings:

Toasted coconut flakes

Cacao nibs

Instructions

For this recipe, you can use either batata or sweet potatoes, based on what ingredients you have access to. The first step to make this delicious dessert is to chop the batata (or sweet potatoes) into small cubes. You will then want to immerse in water immediately to avoid oxidation.

You then have to boil the batata in a medium saucepan in unsalted water. You will have to ensure that it is fork tender, after boiling which usually takes about 20 minutes. Once it is fork tender and soft, remove the batata from the boiling water. At this point, they should be soft. Immediately pour the batata or sweet potatoes into the blender for the next steps.

Once the batata is in the blender, you are then going to add coconut cream, your milk of choice, spices and sweetener to the blender. The ingredients above state that you can use cinnamon, cardamom, cloves, coriander, ginger and white pepper for your spices as well as coconut sugar as a sweetener. You can use the spices and sweeteners that you prefer, those are just the ones we suggest. Once your batata, coconut cream, milk, spices and sweeteners are added to the blender, simply blend until it is very smooth. After it is smoothly blended, pour the mixture into a clean saucepan. You can then add the dates/ raisins and salt in.

Turn your stove on to medium – low heat and place the saucepan on top. You are going to whisk constantly to avoid burning the bottom. Once it has thickened to a yogurt-like consistency, taste test and add more sweetener if desired. After desired amount of sweetener is added, remove from the heat.

In a separate bowl stir gelatin or tapioca powder into about 1 Tablespoon of cold water. After it is thoroughly mixed, being to stir into the pudding until it is well distributed. After the mixture is well stirred, pour it into a metal bowl and mix until it has cooled to room temperature. Once it is at around room temperate, throw it in the fridge to chill for at least 30 minutes.

Once the pudding has been chilled for at least 30 minutes, you can carefully pour it into individual bowls or ramekins. Add coconut flakes and cacao nibs to the top if you would like. It is now ready to serve. Enjoy!
