Lemon & Thyme Ricotta

Your perfect dip has arrived! Depending on your purpose for preparing this tasty side dish, you can make it sweet or savory. It’s up to you! We know you’ll love this ricotta either way.

Prep Time: 10 minutes + 2 hours of soaking.

Cook Time: 0 minutes.

Makes: 6 servings.

Ricotta Ingredients

1 1/2 cups macadamia nuts, soaked 2 hrs

3 Tbsp lemon juice (one small lemon)

1 Tbsp nutritional yeast

1 clove garlic (optional)

Pinch of salt

1/4 – 1/2 cup water

1-2 Tbsp fresh thyme, stems removed

Optional: for sweet cheese, omit garlic and thyme; substitute 2 Tbsp chopped figs or cranberries (Summer Season)

Instructions

Soak macadamia nuts in warm water for at least two hours until softened. If preferred, substitute brazil nuts, cashews or hazelnuts. Can also use sunflower seeds if avoiding nuts. 

In a food processor or high powered blender, combine soaked nuts, lemon juice, garlic (if using), nutritional yeast and salt. Blend until nuts form a fine, smooth paste.

Add water, ¼ cup at a time, blending until cheese is the texture you enjoy.

Finally, add fresh thyme or herbs of choice to the ritcotta and pulse a few times to combine.
