Turkey Cucumber Roll Ups

Need s simple snack recipe that includes veggies and protein? We got you covered. Try these cucumber roll ups. They are simple to make, so you don’t really have an excuse not to.

 

Prep Time: 5 minutes.

Cook Time: 0 minutes.

Makes: 1 serving.

 

Ingredients

Peeled Cucumber Slices (using a vegetable peeler, take off cucumber skin, then continue to peel the cucumber around the seeded middle)

3 slices of real, unprocessed deli meat (I used turkey)

Half a tomato, diced – leave out for Spring

Shredded carrot – leave out for Spring

Shredded lettuce

Instructions

Cut cucumber into thin slices and lay beside each on a cutting board.

Layer turkey on top of sliced cucumbers.

Add sliced veggies on top of the turkey in a line to the side.

Roll tightly into a nice wrap.

Use a paring or serrated knife and slice between each cucumber slice.

It’s that easy!
