Warm and Comforting Recipes

97

As the weather gets colder, we tend to crave warm and filling foods. There are temptations such as fast food around us that are easy ways to get off track. To help you out a little bit, we have put together some of our favorite warm and comforting recipes to get you through this cold snap. These dishes will leave your tummy feeling warm and satisfied so you don’t have to turn to fast food.

Thai food may be one of your busy work night take out options- but you might also experience the guilt and indigestion that goes with eating greasy, sugar and chemical laden food. The solution is here! A delicious Spring Approved Pad Thai that is ready in less than a half hour and packs major nutrition. Heavy and rich enough to feel like a full meal and an excellent meal prep staple to add to the rotation.

Caldo Verde

Spring season can be difficult as we move into the colder months. We are longing for something warm, rich and filling. This soup, drawing on the simplicity and flavors of Portugese cooking, provides all that plus a bright punch of color and flavor. Quickly prepared on the stovetop, slow cooker or instant pot, this is sure to make its way into your Spring rotation. It can also be made vegan by substituting shitake mushrooms for the sausage pieces.

Chicken Curry

As the weather cools down, it is so nice to have a hot, spicy dinner to warm us up! This comforting dish is full of vegetables, healthy protein, and tastes rich and luxurious. Plus it is quick and easy to prepare. You can also easily make it vegan by using mushrooms or eggplant in place of chicken. Try it tonight!

Nourishing Nettle Soup

The stinging nettle uses both physical and chemical defenses to keep predators from munching on it’s precious leaves, but once the stinging hairs are destroyed with pulverization or boiling water, only goodness remains. These leaves have been shown to help reduce inflammation, reduce histamine production, acts as a diuretic, may reduce blood pressure and blood sugar, detoxify and speed healing overall. Of course, all this being said- this will still be a warm, comforting and nourishing soup if you do not have nettles in season and swap the leaves for another leafy green.

Stuffed Pepper Soup
