Pancakes for the win! These are easy to make and they taste delicious. Plus you can fill them whatever you want (WildFit permitted of course).
Prep Time: 20 minutes.
Cook Time: 5 minutes.
Makes: 8-12 servings.
2 cups yuca flour
1 cup sweet potato flour
a few pinches of non aluminum baking soda
a pinch of salt
add 1 cup of water to get the consistency
1-2 Tbsp coconut oil
Stir together dry ingredients in a large bowl. Mix all the eggs together in a separate bowl. Stir the two together, and then add water, little by little until a thin consistency is formed.
Heat a large , shallow pan to medium-high. Add a bit of coconut oil to make sure the batter doesn’t stick. Add about ¼-⅓ cup of batter to the pan, cook until bubbles form, about a minute, then flip for another minute.
Use a savoury or sweet sauce and fill as preferred.
